Pumpkin spice French toast

I’ve spent the past week wearing sweaters, jackets, riding boots and leggings while touring apple orchards. Fall is so fantastic! Keeping with last week’s fall food theme, this week’s recipe is a healthy(ish) version of pumpkin spice French toast!

I stumbled upon this recipe on Pinterest, and it was very easy to recreate.

You’ll need:

3 eggs
Bread (I used a loaf of Meijer multigrain)
1/2 cup lowfat milk (I used Meijer vanilla soy)
1/4 cup canned pumpkin
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. ground cloves

Combine the eggs, milk, pumpkin and spices into a large shallow dish. I used an extra frying pan because, let’s be real, I’m barely out of college and haven’t quite mastered the kitchen basics yet. Whisk it all together.

Put a second frying pan on the stovetop, medium-high heat. Let it warm up, and either coat it with non-stick cooking spray, or put a little bit of coconut oil in and let it melt. (I chose the latter.) Take your slice of bread, coat it on both sides with the mixture, and then (carefully) toss it on in the frying pan to cook.

Smells so good. Once you’ve reached a nice golden brown, you’re done!

Sprinkle with cinnamon and serve with maple syrup. A glass of cold apple cider on the side is highly recommended. Enjoy!
