Cheesy chicken and bacon slow cooker Tater Tot casserole

I couldn’t possibly fit another word into that recipe’s title, could I? This is a recipe for the Jake, since I’m not partial to chicken, bacon or any once-living animal. My stomach just can’t handle it. I’m back to the slow cooker binge after last week’s pause for my Thanksgiving side dish recipe, and this one was apparently a hit.

Jake’s been on quite a Tater Tot binge lately. And for $2 a bag, who can blame him? Unfortunately, Jake isn’t all too creative with his cooking skills, so his Tater Tots are usually served either a. baked with a side of ketchup, or b. baked with shredded cheese on top. So when I stumbled upon a Tater Tot casserole recipe on Pinterest the other day, it was all too perfect.

You’ll need:
1 32 oz. bag Tater Tots
3 cups shredded cheddar cheese
1 package bacon
1 lb chicken breast
1 cup milk
Salt and pepper

Cook your bacon and dice up the chicken into small bite-size pieces. Now, you just layer.
Half the bag of Tater Tots
1/3 of the cheese
1/3 of the bacon
All of the chicken
Salt and pepper to taste
1/3 of the cheese
1/3 of the bacon
The rest of the Tater Tots
The rest of the cheese
The rest of the bacon
The milk

It should look something like this when you’re finished layering:

chicken_bacon_tater_tot_casseroleThat’s it. Cook it on low for four to six hours. The recipe I found called for three ounces of bacon bits. Because Jake is a bacon fiend, he just decided to cook the entire package for the dish. Well, OK. He also added an extra cup of cheese, since the original recipe called for two. However, he and his roommates deemed it a hit, so I guess Jake knows best when it comes to shredded cheese and bacon!
